These Tartelette are the most versatile I’ve ever made and can be filled with sweet or savory just adjust the salt or sweeten with a little sugar. Avocado mousse was pipped in after adding some zesty lime juice and herbs, the sashimi was done with dashi, lime, mirin, sesame oil, rice wine vinegar. Don’t mix this too early as it will cure the salmon too much. I’ve added togarashi and shallot, chive and black caviar with garnished.
